  1. To make the dressing, combine lime juice, fish sauce and Organic Mountain Panela in a small bowl and whisk to combine. Set aside.
  2. Wash and roughly chop bok choy, gai lan and snow peas. Place prepared vegetables in a steaming basket. Set over boiling water and allow to steam for 4-5 minutes, or until bright green and tender. Set aside.
  3. Meanwhile, heat Organic Mountain Sesame Oil in a large, non-stick frying pan over medium heat. Cook the fish, skin side down for 3-4 minutes, or until skin is crisp. Season generously. Turn and cook for a further 3-4 minutes, or until fish is cooked to your liking.
  4. Add fish fillets to a plate and serve with bok choy, gai lan and snow peas. Drizzle over dressing and garnish with coriander leaves, chilli flakes and lime wedges.
