  1. Preheat oven to 180°C. Line an oven-proof tray with non-stick baking paper.
  2. Arrange pumpkin slices on tray and brush with Organic Mountain Sesame Oil. Sprinkle with sesame seeds and Organic Mountain Chia Seeds and season generously with salt and pepper. Roast for 35-40 minutes or until the pumpkin is caramelised and tender.
  3. Meanwhile, to make the crunchy seeds, heat a small non-stick pan over medium heat. Add the pumpkin seeds and Organic Mountain Raw Sugar. Toast until fragrant, stirring occasionally, until sugar melts and pumpkin seeds are golden. Season with sea salt.
  4. To assemble the salad, arrange mixed salad greens on serving plate and top with roast pumpkin, chopped cherry tomatoes and sprouts. Sprinkle with caramelised seeds to serve.
