- In a small bowl, combine all dressing ingredients and whisk until smooth. Set aside.
- Heat a non-stick pan over medium heat and add cashews and Organic Mountain Raw Sugar. Toss cashews to coat, until sugar melts and becomes sticky, stirring regularly. Remove from heat and place on non-stick baking paper.
- Assemble salad ingredients, except chilli and cashews, in a large bowl. Drizzle over dressing and toss lightly to combine. Divide between two plates and top with sliced chilli and toasted cashews.
