    For the pudding

  • For the sticky butterscotch sauce:

  1. Chop the bananas and cover with the boiling water and bi-carb. Allow to cool.
  2. Cream the Nuttelex, vanilla and sugar until pale and aerated.
  3. Add the eggs one at a time. Beat well after each addition.
  4. Preheat oven to 170°C
  5. Sift the flours together and fold in. Put the soaked bananas into a blender and blend to a course puree. Fold though the base mix.

    For the sticky butterscotch sauce:

  1. Combine all ingredients in a saucepan, simmer for 5 minutes or until it has a nice coating consistency on the back of the spoon.
  2. When the puddings are cooked, spoon a little sauce over each pudding while they are warm and allow the sauce to soak in. Turn out on to the plate to serve.
  3. Serve with the rest of the sauce heated up and generously poured over the pudding. Sprinkle with some gold dusted panela sugar to finish!
