  1. Pre-heat oven to 200˚C
  2. Wash carrots and place on a large baking tray with the panela, oil, garlic, salt, pepper and nutmeg. Mix until carrots are coated in the panela, oil and spices
  3. Roast in the oven for 30-35 minutes, or until carrots are tender.
  4. Mix yogurt, salt, lemon zest and juice in a bowl and spread on the serving plate, sprinkle parsley on top.
  5. Add carrots and scatter walnuts to serve.
